Five Questions with Estelle

Estelle Monbi, Chef/Founder of Nefi Studio

Estelle Monbi

Do you recall the worst dinner party you ever attended?

For my first anniversary, I surprised my husband with what looked like a beautiful Victorian dinner cruise with stately rooms in Philadelphia. The photos on the website were gorgeous. But in reality? We all ended up on the top deck eating dinner out of plastic containers with plastic utensils. I was absolutely livid. Site visits are a must.

What's the biggest mistake home cooks make when entertaining?

Being unprepared. Prep is everything. I've learned that one the hard way. Do a little bit each day leading up.

What's one dish that always impresses guests but is secretly easy to prepare?

Beef Bourguignon. It feels elegant and incredibly comforting, but the recipe does most of the work for you. All you need is a good Dutch oven, quality ingredients, and a little patience.

What's a pantry staple you can't live without?

Maggi Seasoning. It's my secret weapon. A few drops can wake up almost anything, from soups to vegetables. I know how this might sound but a few drops to Mayo, makes an amazing dipping sauce, a sauce on a hamburger.

What's the biggest mistake home cooks make when entertaining?

Being unprepared. Prep is everything. I've learned that one the hard way. Do a little bit each day leading up.

Before you leave can you give us your recipe for Basque Cheesecake?

Sure. The trick is patience. When you pull it out of the oven, it will still be wiggly. Resist the urge to cut into it; pop it in the fridge overnight to let it firm up

The recipe

Basque Cheesecake

A beautifully simple Basque cheesecake with a deeply caramelized top and a rich, creamy center. Baked until dark and wobbly, then chilled overnight, it is the kind of dessert that needs very little fuss. Serve it simply, with fresh seasonal fruit or nothing at all.
